Ingredients

  • 1 cup sugar
  • 2 packages unflavored gelatin
  • 2 large carrots, shredded
  • 1 cup nuts
  • 1 medium size whipped topping
  • 1 large can crushed pineapple
  • 6 tablespoons water
  • 1 cup chopped celery
  • 1 cup cottage cheese
  • 1 cup mayonnaise

Instructions

  1. In a large bowl, mix the crushed pineapple and sugar.
  2. In a saucepan, bring water and gelatin to a boil.
  3. Pour the hot gelatin mixture over the pineapple and sugar, and stir.
  4. Refrigerate until the mixture is slightly set.
  5. Add shredded carrots, chopped celery, cottage cheese, nuts, whipped topping, and mayonnaise to the pineapple mixture.
  6. Refrigerate until the salad is fully set and chilled.
