Ingredients

  • 2 cans tuna (6 1/2 oz. each)
  • 3 eggs
  • 1 (4 oz.) can sliced mushrooms
  • 1 Tbsp. chopped parsley
  • 1 medium tomato
  • 4 slices American cheese
  • 1 envelope instant mashed potato mix

Instructions

  1. Beat the eggs slightly and add them to the separated chunks of tuna.
  2. Add sliced mushrooms and chopped parsley.
  3. Place the mixture in the bottom of a well-greased 9-inch pie tin.
  4. Top with tomato slices and three slices of American cheese.
  5. Prepare the mashed potato mix, using half a cup less liquid than the package directions call for.
  6. Spoon the mashed potatoes over the cheese layer.
  7. Cut the remaining cheese slice into narrow strips and arrange them on top of the pie in a wagon wheel spoke design.
  8. Bake at 375°F for 30 minutes or until the potatoes are lightly browned and the cheese melts.
  9. Cut into wedges and serve hot, garnished with parsley and/or paprika.
