Ingredients

  • 6 oz. chili powder
  • 2 Tbsp. cumin
  • 1 tsp. oregano
  • 1 1/2 lb. fine diced onions
  • 2 bay leaves
  • 1 or 2 cans beef bouillon
  • 1 or 2 cans chicken bouillon
  • 2 lb. ground beef
  • 1 lb. ground pork
  • 2 tsp. garlic powder
  • 3 tsp. paprika
  • 3 tsp. red pepper
  • 2 Tbsp. dry onion flakes
  • 5 c. canned tomatoes, crushed
  • 1 1/2 Tbsp. virgin olive oil
  • 1/2 c. dry parsley flakes
  • 4 oz. hot green chilies
  • 2 garlic cloves

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onions and cook until translucent.
  3. Stir in the garlic cloves and cook for another minute.
  4. Add the ground beef and ground pork, cooking until browned.
  5. Mix in the chili powder, cumin, oregano, garlic powder, paprika, red pepper, and dry onion flakes.
  6. Add the crushed canned tomatoes and stir well.
  7. Pour in the beef and chicken bouillon cans, adjusting for desired consistency.
  8. Add the bay leaves and hot green chilies.
  9. Simmer uncovered for about 45-60 minutes, stirring occasionally.
  10. Optional: Rinse and drain beans, then add to the chili and cook for an additional 15 minutes.
  11. Remove bay leaves before serving.
