Ingredients

  • 2 cups sugar
  • 1 cup oil
  • 3 eggs
  • 2 teaspoons red food coloring
  • 2 small jars strained baby food plums (4 1/2 oz.)
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves

Instructions

  1. Combine sugar, oil, and eggs in a mixing bowl.
  2. Beat well until mixture is smooth and creamy.
  3. Add red food coloring and strained plums to the mixture.
  4. In a separate bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, and cloves.
  5. Gradually add dry ingredients to the wet mixture and blend well.
  6. Fold in nuts into the batter.
  7. Pour the batter into a greased Bundt pan.
  8. Bake at 325°F (163°C) for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool before dusting with confectioners sugar.
