Plum Strawberry Bread

Ingredients

  • 3 c. raisins
  • 1 c. brandy or grape juice
  • 1 pt. strawberries
  • 2 c. blended plums
  • 2 c. blended prunes
  • 2 Tbsp. lemon juice
  • 3 Tbsp. melted butter
  • 2 Tbsp. vanilla
  • 3 eggs
  • 4 c. plain flour
  • 2 1/2 c. sugar
  • 1 Tbsp. salt
  • 1 Tbsp. baking powder
  • 1 Tbsp. cinnamon

Instructions

  1. Combine raisins, brandy or grape juice and enough water to cover raisins in a saucepan.
  2. Bring to a simmer, then cool and drain.
  3. Grease and flour three 5 x 9-inch loaf pans or muffins.
  4. Mash or chop strawberries.
  5. Combine strawberries with remaining wet ingredients and stir.
  6. Combine with dry ingredients and mix well.
  7. Divide the batter evenly among the pans.
  8. Bake for about 1 hour.
