Ingredients

  • 3 cups cooked rice
  • 1/2 cup chopped green pepper
  • 1 medium onion chopped
  • 1/2 cup thinly sliced celery
  • 1 clove garlic mashed
  • 3 tablespoons butter or margarine
  • 1 can condensed chicken soup
  • 1 pound can tomato wedges with juice drained
  • 1 pound boned chicken diced
  • 1/4 teaspoon crumbled marjoram leaf
  • 1/4 teaspoon salt

Instructions

  1. Place cooked rice in a lightly greased 8-cup baking dish.
  2. Saute green pepper, onion, celery, and garlic in butter until tender in a large saucepan.
  3. Stir in condensed chicken soup, drained tomato wedges with juice, diced chicken, marjoram, and salt.
  4. Pour the mixture over the rice, spreading evenly.
  5. Sprinkle with cheese.
  6. Cover and bake in a moderate oven (350°F) for 30 minutes until bubbly hot.
