Pork And Cumin
Ingredients
- 2 lb. pork shoulder, boneless and cut into 1-inch cubes ⓘ
- 1/4 c. flour ⓘ
- 1/2 c. oil ⓘ
- 1 medium onion, chopped (about 1/2 c.) ⓘ
- 2 slices bacon
- 1/2 c. water ⓘ
- 4 tomatoes, chopped ⓘ
- 2 medium potatoes, diced ⓘ
- 2 Tbsp. orange juice ⓘ
- 1 Tbsp. lemon juice ⓘ
- 2 tsp. instant chicken bouillon ⓘ
- 2 tsp. cumin ⓘ
- 1 tsp. oregano ⓘ
- 1/2 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
- 1/2 c. sour cream (optional) ⓘ
Instructions
- Coat
- pork
- with
- flour.
- Heat oil
- in 10-inch skillet until hot.
- Cook and
- stir pork over medium heat until brown. Drain. Cook
- and
- stir
- onion and bacon in same skillet until bacon
- is crisp.
- Stir
- in
- pork
- and
- remaining ingredients, except sour cream.
- Heat to boiling.
- Reduce heat.
- Cover and simmer until pork
- is tender, about 45 minutes. Stir in sour cream, if desired, and heat until hot.
- Makes 7 servings.
