Ingredients

  • 2 lb. pork shoulder, boneless and cut into 1-inch cubes
  • 1/4 c. flour
  • 1/2 c. oil
  • 1 medium onion, chopped (about 1/2 c.)
  • 2 slices bacon
  • 1/2 c. water
  • 4 tomatoes, chopped
  • 2 medium potatoes, diced
  • 2 Tbsp. orange juice
  • 1 Tbsp. lemon juice
  • 2 tsp. instant chicken bouillon
  • 2 tsp. cumin
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. sour cream (optional)

Instructions

  1. Coat
  2. pork
  3. with
  4. flour.
  5. Heat oil
  6. in 10-inch skillet until hot.
  7. Cook and
  8. stir pork over medium heat until brown. Drain. Cook
  9. and
  10. stir
  11. onion and bacon in same skillet until bacon
  12. is crisp.
  13. Stir
  14. in
  15. pork
  16. and
  17. remaining ingredients, except sour cream.
  18. Heat to boiling.
  19. Reduce heat.
  20. Cover and simmer until pork
  21. is tender, about 45 minutes. Stir in sour cream, if desired, and heat until hot.
  22. Makes 7 servings.
