Ingredients

  • 1 boneless pork loin roast (1 lb.)
  • 1/2 tsp. pepper
  • 1 loaf French or Italian bread
  • 4 oz. fresh spinach
  • 1 medium tomato
  • 1 medium cucumber
  • 1 ripe avocado
  • 1 medium green pepper
  • 1/2 lb. alfalfa sprouts
  • 1/4 cup bottled Italian salad dressing

Instructions

  1. Rub the pork loin roast with pepper and place in a shallow roasting pan.
  2. Roast uncovered at 325°F for 45 to 60 minutes.
  3. Let the roast stand for 10 minutes, then slice thinly.
  4. Slice the bread lengthwise.
  5. On the bottom half of the bread, layer spinach, sliced pork, tomato slices, cucumber slices, avocado slices, green pepper strips, and alfalfa sprouts.
  6. Drizzle the Italian salad dressing over the layered ingredients.
  7. Replace the top of the bread and serve immediately.
