Ingredients

  • 6 cups ground ham
  • 1 cup bread crumbs
  • 1 cup mashed potatoes
  • 2 eggs beaten
  • 2 tablespoons parsley
  • 1 small onion
  • 1 tablespoon margarine
  • 2 teaspoons mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons orange juice concentrate
  • 2 tablespoons honey

Instructions

  1. Combine ground ham, bread crumbs, mashed potatoes, beaten eggs, and parsley in a bowl.
  2. Sauté the small onion in margarine until tender.
  3. Stir in mustard, salt, and pepper into the sautéed onions.
  4. Add the onion mixture to the ham mixture and mix well.
  5. Rinse a bread pan in cold water, then pack the ham mixture into it.
  6. Turn out the ham loaf onto a greased shallow baking pan.
  7. Mix orange juice concentrate and honey to make the glaze.
  8. Brush the glaze over the ham loaf.
  9. Bake at 400°F (200°C) for 20 minutes.
  10. Brush the loaf with the remaining orange juice mixture.
  11. Bake for an additional 20 minutes.
  12. Cool, cover, and refrigerate before serving.
