A rich, fruity Porter Cake packed with raisins, cherries, almonds, and mixed peel, perfect for festive occasions and loved for its deep, spiced flavors and moist texture.

Ingredients

  • 4 1/2 cups white flour
  • 2 1/2 cups brown sugar
  • 4 1/2 cups raisins
  • 1 teaspoon bicarbonate of soda
  • 4 eggs
  • 1 cup butter
  • 1 cup glace cherries
  • 1 cup chopped almonds
  • 1 cup chopped mixed peel
  • 1/2 pint Guinness
  • juice and grated rind of 1 lemon

Instructions

  1. Rub butter into flour and add all other dry ingredients.
  2. Blend very well.
  3. Beat eggs with lukewarm Guinness and add bicarbonate of soda.
  4. Mix this very well into dry cake mixture.
  5. Turn the mixture into a greased, lined 9-inch diameter, 3-inch high cake tin.
  6. Cover with grease-proof paper and bake at 200° to 250°F for 3 to 3½ hours, removing the paper for the last half-hour.
  7. Test with a skewer for doneness.
  8. Allow to cool, then optionally ice to extend shelf life or enhance presentation.
