Ingredients

  • 1 chicken (2 1/2 to 3 lb.)
  • 1 large green pepper
  • 1 lb. fresh mushrooms
  • 2 cans white cannellini beans
  • oil
  • 1 1/2 lb. sweet Italian sausage
  • 2 large onions or small white onions
  • 1 large can crushed tomatoes
  • 1 garlic clove
  • 1 c. white or red dry wine
  • salt

Instructions

  1. Cut up chicken into serving pieces.
  2. Cut up sausage, green pepper, and onions.
  3. Brown chicken and sausage in oil with crushed garlic clove, being careful not to burn the garlic.
  4. Set chicken and sausage aside.
  5. Lightly sauté onions, mushrooms, and green pepper in the same oil.
  6. Put chicken, sausage, vegetables, crushed tomatoes, beans (including juice), and wine in a heavy casserole with a tight-fitting lid.
  7. Ensure there is enough liquid to cover the meat and ingredients; add more wine if needed.
  8. Mix gently.
  9. Cover tightly and cook in a moderate oven at 350°F (175°C) for at least 2 to 2.5 hours.
  10. Test meat for doneness; long cooking enhances flavor.
  11. Serve with salad and French bread.
