- Cut up chicken into serving pieces.
- Cut up sausage, green pepper, and onions.
- Brown chicken and sausage in oil with crushed garlic clove, being careful not to burn the garlic.
- Set chicken and sausage aside.
- Lightly sauté onions, mushrooms, and green pepper in the same oil.
- Put chicken, sausage, vegetables, crushed tomatoes, beans (including juice), and wine in a heavy casserole with a tight-fitting lid.
- Ensure there is enough liquid to cover the meat and ingredients; add more wine if needed.
- Mix gently.
- Cover tightly and cook in a moderate oven at 350°F (175°C) for at least 2 to 2.5 hours.
- Test meat for doneness; long cooking enhances flavor.
- Serve with salad and French bread.
