Eggs Mornay features creamy cheese sauce with sharp Cheddar and Parmesan, served over eggs, perfect for brunch or elegant breakfast gatherings, blending rich flavors with a luscious texture.

Ingredients

  • 6 Tbsp butter
  • 6 Tbsp flour
  • 1 3/4 cups milk
  • 1 cup chicken broth
  • 4 oz sharp Cheddar, diced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sherry
  • 1/2 tsp Worcestershire sauce
  • salt and pepper
  • 12 eggs
  • chopped parsley

Instructions

  1. Make a sauce with butter, flour, milk, chicken broth, Cheddar, Parmesan, sherry, Worcestershire sauce, salt, and pepper.
  2. Adjust seasoning with salt and pepper to taste.
  3. Hard-cook eggs or cook less time if preferred. Shell while warm and place in a shallow baking dish.
  4. Surround the eggs with the sauce and sprinkle with croutons.
  5. Reheat if necessary in a slow oven at 300°F (150°C).
  6. Just before serving, sprinkle with chopped parsley.
