Ingredients

  • 3/4 c. cottage cheese
  • 8 oz. mushrooms, chopped
  • 1/2 c. grated Parmesan cheese
  • 6 green onions, sliced (including tops)
  • 3 large egg whites
  • 1/3 c. plain dry bread crumbs
  • 1/2 tsp. dried marjoram
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 6 medium potatoes, peeled and shredded

Instructions

  1. Preheat oven to 400°.
  2. Grease a 9 x 5 x 3-inch loaf pan; set aside.
  3. In a blender puree cottage cheese for 1 minute or until smooth.
