Ingredients

  • 8 medium potatoes
  • 1 medium onion
  • 2 eggs
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/2 cup vinegar
  • 1/2 cup milk
  • 2 tablespoons butter or margarine
  • 1 tablespoon celery seed

Instructions

  1. Boil potatoes in skins until done.
  2. Cool, peel, and dice the potatoes.
  3. Dice the onion and mix with the potatoes.
  4. Add celery seed and salt to taste.
  5. Beat eggs in the top of a double boiler.
  6. Mix flour, sugar, and salt, then add to eggs, stirring often.
  7. Gradually add vinegar to this mixture.
  8. Cook over slow boiling water, stirring constantly to avoid lumps, until thickened.
  9. Remove from heat and add milk and butter, mixing well.
  10. Pour the cooked dressing over the diced potatoes and chill for a few hours.
