Ingredients

  • 2 medium potatoes
  • 1 medium onion
  • 1 (10 oz.) package chopped spinach
  • 3/4 cup Bisquick
  • 1 3/4 cups milk
  • 1/2 cup shredded Cheddar cheese
  • 2 eggs
  • 3/4 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1/8 teaspoon pepper

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 12 x 7 1/2 x 2-inch rectangular baking dish.
  3. Thinly slice the potatoes and layer them in the prepared dish, then top with sliced onion.
  4. Mix chopped spinach, Bisquick, milk, shredded Cheddar cheese, eggs, salt, Italian seasoning, and pepper until well combined.
  5. Pour the mixture over the layered potatoes and onions.
  6. Bake until potatoes are tender and top is golden, about 35 minutes.
