Ingredients

  • 2 lb. frozen hash browns
  • 1/2 cup yellow onion, finely chopped
  • 1/4 cup green onions, finely chopped
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
  • 1/2 cup butter
  • 16 oz sour cream
  • 1 can Cream of chicken soup
  • 2 cups corn flakes, crushed

Instructions

  1. Saute onions in 1/4 cup butter until translucent.
  2. Sprinkle with salt and pepper.
  3. In a large bowl, mix soup and sour cream until well combined.
  4. Stir in the onion mixture and add the frozen hash browns.
  5. Mix well but do not over-stir to prevent breaking down the cream.
  6. Pour the mixture into a 13 x 9-inch baking dish.
  7. Melt the remaining 1/4 cup butter and combine with crushed corn flakes.
  8. Sprinkle the cornflake mixture on top of the casserole.
  9. Bake at 350°F for 45 minutes until bubbly and golden.
