- Let cornbread cool, then crumble into a large bowl.
- In hot butter in a large skillet, sauté celery and onion until tender, about 5 minutes.
- Remove from heat; add parsley, sage, thyme, salt, and pepper.
- With a fork, stir eggs, broth, and vegetable mixture into crumbled cornbread.
- Toss lightly until well combined.
- To stuff and truss the turkey, spoon stuffing into the neck cavity.
- Bring the skin of the neck over the back and fasten with poultry pins.
- Spoon dressing lightly into the body cavity of the bird; do not pack.
- Insert about 5 poultry pins at regular intervals to draw the body opening together.
- With twine, lace the cavity closed, bootlace fashion, and tie with a knot.
- Bend wing tips under the body or fasten to the body with poultry pins.
- Tie the ends of the legs together with twine.
