Ingredients

  • 2 (10 to 12 oz.) packages cornbread mix
  • 1/2 cup butter or margarine
  • 3 cups chopped celery
  • 2 cups chopped onion
  • 1/4 cup chopped parsley
  • 1 teaspoon dried sage leaves
  • 1 teaspoon dried thyme leaves
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 eggs
  • 1 cup canned chicken broth

Instructions

  1. Prepare cornbread mix and bake as package label directs.
  2. Let cornbread cool, then crumble into a large bowl.
  3. In hot butter in a large skillet, sauté celery and onion until tender, about 5 minutes.
  4. Remove from heat; add parsley, sage, thyme, salt, and pepper.
  5. With a fork, stir eggs, broth, and vegetable mixture into crumbled cornbread.
  6. Toss lightly until well combined.
  7. To stuff and truss the turkey, spoon stuffing into the neck cavity.
  8. Bring the skin of the neck over the back and fasten with poultry pins.
  9. Spoon dressing lightly into the body cavity of the bird; do not pack.
  10. Insert about 5 poultry pins at regular intervals to draw the body opening together.
  11. With twine, lace the cavity closed, bootlace fashion, and tie with a knot.
  12. Bend wing tips under the body or fasten to the body with poultry pins.
  13. Tie the ends of the legs together with twine.
