Ingredients

  • 1/3 cup minced shallots
  • 3 tablespoons butter or margarine
  • 2 cups heavy cream
  • 1/2 cup Grey Poupon Dijon mustard
  • 1 cup shredded cheese
  • 1 tablespoon chopped fresh basil leaves
  • 8 medium potatoes peeled and thinly sliced
  • 1/4 cup sliced almonds toasted

Instructions

  1. In a medium saucepan over medium heat, cook shallots in 1 tablespoon butter until tender.
  2. Stir in cream, Dijon mustard, and remaining butter.
  3. Simmer for 5 minutes.
  4. Reduce heat to low; add 1/2 cup shredded cheese and basil, stirring until cheese melts.
  5. Layer peeled and thinly sliced potatoes in a buttered baking dish.
  6. Pour the cream mixture over the potatoes.
  7. Top with toasted sliced almonds and remaining shredded cheese.
  8. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes until golden and bubbly.
