Ingredients

  • 1 lb. ground beef
  • 2 small onions, sliced
  • 1 large green pepper, chopped
  • 1 (1 lb.) can tomatoes
  • 1/2 cup uncooked regular rice
  • 1 cup corn
  • 1 to 2 teaspoons chili powder
  • 2 teaspoons salt
  • 1/8 teaspoon pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook and stir ground beef until light brown; drain off fat.
  3. Add sliced onions and chopped green pepper; cook and stir until onions are tender.
  4. Stir in canned tomatoes, uncooked rice, chili powder, salt, and pepper; heat through.
  5. Pour the mixture into an ungreased 2-quart casserole dish.
  6. Cover and bake for 45 minutes.
  7. Remove from oven, add corn to the casserole, and bake uncovered for an additional 15 minutes.
