Ingredients

  • 3 Tbsp butter
  • 4 Tbsp flour
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 1/2 c sliced cooked potatoes
  • 4 hard-cooked eggs sliced
  • 1/4 tsp celery salt
  • 2 Tbsp chopped peppers
  • 2 Tbsp chopped pimentos
  • 2 c milk
  • 1 medium onion

Instructions

  1. Melt butter in a saucepan; add flour and seasonings (salt, pepper, celery salt).
  2. Blend carefully and gradually add milk, stirring constantly.
  3. Cook until a creamy sauce forms, then pour over the sliced potatoes, eggs, peppers, and pimentos, and mix well.
  4. Pour the mixture into a buttered shallow baking dish.
  5. Bake in a moderate oven for 25 minutes until golden and bubbly.
