Ingredients

  • 2 cups flour
  • 2 packages coconut pudding mix
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 cup chopped nuts
  • 5 eggs
  • 2 cups sugar

Instructions

  1. Grease and flour 2 full size loaf pans.
  2. In a large mixer bowl, sift together flour, salt, soda, and spices.
  3. Stir in coconut pudding mix.
  4. Make a well in the center and add beaten eggs, sugar, oil, pumpkin, and vanilla.
  5. Beat on medium speed until well blended.
  6. Stir in chopped nuts.
  7. Do not overbeat.
  8. Pour batter into prepared loaf pans.
  9. Bake at 350°F for 50 to 60 minutes.
