Ingredients

  • 1 cup cooked pumpkin
  • 1/2 cup bananas
  • 1 cup firmly packed brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 cup chopped nuts (optional)

Instructions

  1. In a large mixer bowl, combine pumpkin, bananas, sugar, and oil; mix well.
  2. Beat in one egg at a time.
  3. In another bowl, sift together flour, baking powder, cinnamon, ginger, and salt.
  4. Add the dry ingredients to the pumpkin mixture and beat well.
  5. Stir in chopped nuts, if using.
  6. Pour the batter into two greased loaf pans (7 1/2 x 3 1/2 x 2 1/4 inches).
  7. Bake in a preheated oven at 450°F (232°C) for 50 to 60 minutes.
  8. Cool for 5 minutes in the pans.
  9. Remove from pans and cool completely before slicing.
  10. Can be made ahead and frozen.
