- In a large mixer bowl, combine pumpkin, bananas, sugar, and oil; mix well.
- Beat in one egg at a time.
- In another bowl, sift together flour, baking powder, cinnamon, ginger, and salt.
- Add the dry ingredients to the pumpkin mixture and beat well.
- Stir in chopped nuts, if using.
- Pour the batter into two greased loaf pans (7 1/2 x 3 1/2 x 2 1/4 inches).
- Bake in a preheated oven at 450°F (232°C) for 50 to 60 minutes.
- Cool for 5 minutes in the pans.
- Remove from pans and cool completely before slicing.
- Can be made ahead and frozen.
