Ingredients

  • 1/4 cup unsalted butter, softened
  • 1 cup brown sugar, firmly packed
  • 2 large eggs
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 cup coarsely chopped walnuts
  • 1 cup currants or raisins
  • 1 cup chopped glaced cherries or mixed glaced fruit

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a large bowl, cream together the softened unsalted butter and brown sugar until smooth.
  3. Beat in the eggs, honey, and vanilla extract until the mixture is fluffy.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground cloves, and ground nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, mixing well.
  6. Stir in the coarsely chopped walnuts, currants or raisins, and chopped glaced cherries or mixed glaced fruit.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for about 20 minutes, or until the cookies are golden around the edges.
  9. Allow cookies to cool slightly on the baking sheet before transferring to a wire rack to cool completely.
