Ingredients

  • 4 eggs, beaten
  • 2 1/2 cups white sugar
  • 1/2 cup molasses
  • 1 cup vegetable oil
  • 2 cups pumpkin
  • 3 1/2 cups sifted flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 tablespoon pumpkin pie spice
  • 1 cup chopped nuts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two loaf pans.
  2. In a large mixing bowl, beat the eggs.
  3. Add the sugar, molasses, and vegetable oil; mix well.
  4. Stir in the pumpkin until well combined.
  5. In a separate bowl, sift together the flour, baking soda, salt, and pumpkin pie spice.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the chopped nuts.
  8. Divide the batter evenly between the two prepared pans.
  9. Bake for 1 hour or until a toothpick inserted into the center comes out clean.
  10. Remove from oven and let cool slightly before removing from pans. Cool completely before slicing.
