Savory Parmesan stuffed mushrooms feature tender caps filled with a flavorful mixture of garlic, onion, herbs, and cheese, perfect as an appetizer or party finger food.

Ingredients

  • 2 lb. mushrooms
  • 1/2 c. Parmesan cheese, grated
  • 3/4 c. dry bread crumbs
  • 1/2 c. onion pulp
  • 2 garlic cloves
  • 3 Tbsp. parsley
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. oregano
  • 3 Tbsp. olive oil

Instructions

  1. Remove mushroom stems and chop very fine.
  2. Mix chopped stems with bread crumbs.
  3. Cut onion in half and scrape out the pulp.
  4. Mix onion pulp into the bread crumb mixture.
  5. Mince garlic very finely and add to the mixture.
  6. Add parsley, salt, pepper, and oregano to the mixture.
  7. Stuff the mushroom caps with the prepared mixture.
  8. Pour a little of the olive oil into a baking dish.
  9. Place the stuffed mushroom caps in the dish and sprinkle with the remaining oil.
  10. Bake in a 350°F oven for 25 minutes.
