Ingredients

  • 1 3/4 cups low-fat milk
  • 1/2 cup canned pumpkin
  • 1/3 cup packed brown sugar
  • 2 tablespoons reduced-calorie maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 2 eggs
  • 4 egg whites
  • 1/2 cup water
  • 1/3 cup raisins

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat milk in a heavy 1-quart saucepan until hot, but not boiling.
  3. Mix pumpkin, brown sugar, maple syrup, cinnamon, ginger, eggs, and egg whites in a large bowl until smooth.
  4. Gradually beat in hot milk into the pumpkin mixture.
  5. Divide the mixture evenly among 6 ungreased 10-ounce custard cups.
  6. Place the cups in a rectangular pan measuring 13 x 9 x 2 inches.
  7. Pour very hot water into the pan to within 1 inch of the tops of the cups.
  8. Bake in the preheated oven for about 35 minutes, or until the custards are set.
  9. Remove from water bath and let cool slightly before serving.
