Ingredients

  • 3 cups sugar
  • 1 cup oil
  • 4 eggs
  • 2 cups mashed pumpkin
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/4 teaspoon powdered cloves
  • 2/3 cup water

Instructions

  1. Stir together sugar, oil, eggs one at a time, and pumpkin in a large bowl.
  2. Add sifted flour, baking soda, baking powder, cinnamon, nutmeg, salt, cloves, and water; mix well.
  3. Pour batter into three small loaf pans lined with wax paper.
  4. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
  5. Allow the bread to cool before sealing in plastic bags for storage.
  6. Can be frozen for longer shelf life.
