Ingredients

  • 1/4 lb. sliced fresh mushrooms
  • 1/2 cup chopped onion
  • 1 Tbsp. oil or butter
  • 1 Tbsp. flour
  • 2 Tbsp. curry powder
  • 3 cups homemade chicken stock or canned
  • 1 lb. canned pumpkin
  • 1 Tbsp. honey
  • dash of nutmeg
  • salt and pepper
  • 1 cup heavy cream

Instructions

  1. Saute mushrooms and onions in oil or butter.
  2. Add the flour and curry powder; stir to combine.
  3. Gradually add the broth, then the pumpkin, honey, and seasonings to taste.
  4. Cook for 15 minutes, stirring constantly.
  5. Add heavy cream and heat through without boiling.
  6. Serve topped with a dollop of sour cream, if desired.
