Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup pumpkin
  • 1 teaspoon lemon juice
  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts

Instructions

  1. Beat eggs and sugar for 5 minutes until well combined and slightly thickened.
  2. Mix together the pumpkin and lemon juice, then add to the egg and sugar mixture and blend well.
  3. Sift together the flour, baking powder, cinnamon, ginger, nutmeg, and salt, then fold into the wet mixture.
  4. Spread the batter evenly in a greased and floured jelly roll pan lined with wax paper.
  5. Sprinkle chopped walnuts over the batter.
  6. Bake at 375°F (190°C) for 10 to 15 minutes until the cake is set.
  7. Remove from oven, sprinkle a dish towel with powdered sugar, and carefully roll the cake while warm.
