Ingredients

  • 1 cup quick cooking oats
  • 1 cup unsifted flour
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup pumpkin
  • 1 egg
  • 1/2 cup margarine
  • 1 teaspoon vanilla
  • 1/2 cup raisins
  • 1/2 cup peanuts

Instructions

  1. Grease a baking pan and set aside.
  2. Combine quick cooking oats, flour, brown sugar, baking powder, and salt in a mixing bowl.
  3. Stir the dry ingredients until well mixed.
  4. Make a well in the center of the mixture.
  5. Add pumpkin, slightly beaten egg, melted margarine, and vanilla to the well.
  6. Stir just until the dry ingredients are moistened.
  7. Fold in raisins and chopped peanuts.
  8. Spread the mixture evenly into the prepared baking pan.
  9. Bake in a preheated 350°F (175°C) oven for 35 to 40 minutes, or until the bars are firm and slightly browned.
  10. Allow to cool in the pan before cutting into bars.
