- Grease a baking pan and set aside.
- Combine quick cooking oats, flour, brown sugar, baking powder, and salt in a mixing bowl.
- Stir the dry ingredients until well mixed.
- Make a well in the center of the mixture.
- Add pumpkin, slightly beaten egg, melted margarine, and vanilla to the well.
- Stir just until the dry ingredients are moistened.
- Fold in raisins and chopped peanuts.
- Spread the mixture evenly into the prepared baking pan.
- Bake in a preheated 350°F (175°C) oven for 35 to 40 minutes, or until the bars are firm and slightly browned.
- Allow to cool in the pan before cutting into bars.
