Ingredients

  • 3 1/2 cups flour
  • 1 1/2 cups brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup canned pumpkin
  • 2 large eggs
  • 1 tablespoon vanilla
  • 2 tablespoons butter
  • 1 1/4 c. macadamia nuts, coarsely chopped

Instructions

  1. Combine the flour, brown sugar, baking powder, salt, and pumpkin pie spice in a large bowl; stir well.
  2. In a separate bowl, whisk together the canned pumpkin, eggs, and vanilla until well combined.
  3. Gradually add the pumpkin mixture to the flour mixture, stirring until the dry ingredients are moistened and the dough is crumbly but cohesive.
  4. Divide the dough into two equal portions and shape each into a log on a greased or parchment-lined baking sheet.
  5. Bake at 350°F (175°C) for about 20-25 minutes until lightly golden.
  6. Allow the logs to cool for 10 minutes, then transfer to a cutting board.
  7. Slice each log diagonally into 1/2-inch thick slices.
  8. Arrange the slices on a baking sheet and bake for an additional 10-12 minutes until crisp.
  9. Remove from oven, cool completely, and enjoy.
