Ingredients

  • 1 1/2 cups sifted flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 4 teaspoons vegetable oil
  • 1/4 cup fruit juice
  • 1/2 cup skim milk
  • 3 teaspoons baking powder
  • 1/2 cup sugar substitute
  • 1/2 teaspoon nutmeg
  • 1 egg, beaten
  • 1/2 cup canned pumpkin

Instructions

  1. Sift together flour, salt, cinnamon, baking powder, nutmeg, and sugar substitute.
  2. Cut in vegetable oil and fruit juice until mixture resembles coarse crumbs.
  3. Add beaten egg, canned pumpkin, and skim milk; stir until just combined.
  4. Fold in raisins.
  5. Spray a muffin tin with nonstick spray or line with paper liners.
  6. Fill each cup about 3/4 full with batter.
  7. Bake at 400°F for 15 to 20 minutes, until golden brown.
  8. Let cool slightly before serving.
