Pumpkin Spice Waffles

Ingredients

  • 2 cups flour
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 1 1/2 cups milk
  • 3/4 cup canned pumpkin puree
  • 2 tablespoons butter, melted
  • cooking spray
  • 1/3 cup toasted pecans, chopped
  • maple syrup (or table syrup)

Instructions

  1. Preheat waffle iron.
  2. Combine flour, sugar, cinnamon, baking powder, ginger, nutmeg and baking soda in a large bowl; mix well and set side.
  3. Whisk together eggs, milk, pumpkin puree and butter in another large bowl.
  4. Stir in flour mixture until a slightly lumpy batter forms.
  5. Spray waffle iron with cooking spray; add batter and cook until waffles are set and golden brown, about 2 minutes.
  6. Serve sprinkled with chopped pecans and drizzle with maple syrup.
  7. TIP: If you do not have a waffle iron, you can use the batter for pancakes.
