Ingredients

  • 8 oz. cream cheese, softened
  • 1/4 cup sugar
  • 1 egg, beaten
  • 1 3/4 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin
  • 1/2 cup margarine, melted

Instructions

  1. Cream the cream cheese, sugar, and beaten egg until smooth and set aside.
  2. Combine flour, sugar, baking soda, cinnamon, and salt in a bowl.
  3. Mix the dry ingredients with the remaining ingredients—canned pumpkin and melted margarine—just until moistened.
  4. Reserve 2 cups of pumpkin batter and pour the rest into a greased and floured 9 x 5-inch loaf pan.
  5. Pour the cream cheese mixture over the pumpkin batter in the pan.
  6. Top with the reserved pumpkin batter.
  7. Cut through the batter with a knife several times to create a swirl effect.
  8. Bake at 350°F (175°C) for 1 hour and 10 minutes or until a wooden pick inserted comes out clean.
  9. Cool for 5 minutes, then remove from the pan.
