- Cream the cream cheese, sugar, and beaten egg until smooth and set aside.
- Combine flour, sugar, baking soda, cinnamon, and salt in a bowl.
- Mix the dry ingredients with the remaining ingredients—canned pumpkin and melted margarine—just until moistened.
- Reserve 2 cups of pumpkin batter and pour the rest into a greased and floured 9 x 5-inch loaf pan.
- Pour the cream cheese mixture over the pumpkin batter in the pan.
- Top with the reserved pumpkin batter.
- Cut through the batter with a knife several times to create a swirl effect.
- Bake at 350°F (175°C) for 1 hour and 10 minutes or until a wooden pick inserted comes out clean.
- Cool for 5 minutes, then remove from the pan.
