Ingredients

  • 6 quail
  • 1/4 cup butter
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • salt and pepper
  • 1 tablespoon cornstarch
  • 1 cup chicken bouillon
  • 1/4 cup cooking sherry
  • 1 tablespoon parsley

Instructions

  1. Saute quail in butter for 10 minutes; remove quail.
  2. Add chopped onion and chopped celery to the butter and cook for 5 minutes over medium heat.
  3. Dissolve cornstarch in chicken bouillon; stir into the onion-celery mixture and cook until thickened.
  4. Stir in cooking sherry and parsley.
  5. Season with salt and pepper to taste.
  6. Arrange the quail in a shallow pan.
  7. Cover with the sauce and bake at 350°F for 1 hour or until tender.
