A hearty pot roast featuring tender chuck meat simmered with onions, garlic, raisins, and spices, served with rich gravy and a side of corn and spiced crab apples.

Ingredients

  • 4 to 5 lb. chuck roast
  • 2 sliced onions
  • 1 clove sliced garlic
  • 2 Tbsp. oil
  • salt and pepper
  • 1/2 cup raisins
  • 2 bay leaves
  • 1 cup boiling water

Instructions

  1. Brown sliced onions and garlic in oil.
  2. Brown the chuck roast on all sides.
  3. Add raisins, bay leaves, and boiling water to the pot.
  4. Cover tightly and simmer on very low heat for 3 hours or until the meat is tender.
  5. Remove the meat from the pot, strain the liquid, and measure it.
  6. For each cup of strained liquid, add 2 tablespoons of flour to make gravy.
  7. Cook the gravy until thickened, stirring constantly.
  8. Serve the gravy with the meat and a side dish of corn and spiced red crab apples.
