Ingredients

  • single pie crust, baked
  • 1 egg, slightly beaten
  • 1 cup powdered sugar
  • 1/4 cup butter or margarine, softened
  • 1/8 teaspoon salt
  • 1/4 teaspoon vanilla
  • 1 1/2 cups whipping cream
  • 2/3 cup crushed pineapple, well drained
  • 1/4 cup chopped pecans
  • maraschino cherry halves
  • mint sprigs

Instructions

  1. Drain the maraschino cherries on paper towels and set aside for garnish.
  2. In a mixing bowl, combine the powdered sugar, softened butter, salt, and vanilla until smooth.
  3. Gradually add the slightly beaten egg to the mixture, blending well.
  4. Whip the cream until stiff peaks form.
  5. Fold the whipped cream into the egg mixture gently.
  6. Stir in the well-drained crushed pineapple and chopped pecans.
  7. Pour the filling into the baked pie crust and chill until set, about 2-3 hours.
  8. Garnish with maraschino cherry halves and mint sprigs before serving.
