Ingredients

  • 16 oz cottage cheese
  • 3 egg whites
  • 5 eggs
  • 1/4 cup buttermilk
  • 1/4 cup flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 cups grated Cheddar cheese
  • 2 green onions, chopped
  • 10 slices bacon, cooked and drained

Instructions

  1. Preheat oven to 400°F.
  2. Mix cottage cheese with a mixer until smooth.
  3. Process egg whites until foamy.
  4. Add eggs, buttermilk, flour, baking powder, and salt to the egg whites.
  5. Mix until smooth.
  6. Stir in grated Cheddar cheese, chopped green onions, and cooked bacon pieces.
  7. Fill muffin tins about 2/3 full with the mixture.
  8. Bake for 12 to 15 minutes until golden and set.
