A creamy, cheesy squash casserole with a crunchy stuffing topping, perfect for quick weeknight dinners or holiday side dishes that everyone will enjoy.

Ingredients

  • 1 can squash or approximately 2 cups fresh cooked squash
  • 1 can cream of mushroom soup
  • 1/2 tablespoon minced onion
  • 1 small can mushroom pieces
  • 12 oz. sharp Cheddar cheese grated
  • 1 cup Pepperidge Farm stuffing mix
  • salt and pepper to taste
  • approximately 2 tablespoons butter

Instructions

  1. Drain the squash into a large glass casserole dish and slice large pieces with a knife.
  2. Add the cream of mushroom soup, minced onion, drained mushroom pieces, grated cheese, salt, pepper, and most of the stuffing mix to the squash.
  3. Stir and mix well until combined.
  4. Sprinkle the top of the casserole with a layer of stuffing mix.
  5. Dab approximately 2 tablespoons of butter on top of the stuffing layer.
  6. Microwave on High for 9 minutes.
  7. Turn the dish a quarter turn to redistribute heat.
  8. Microwave for an additional 9 minutes.
