Ingredients

  • 1 egg
  • 1 cup applesauce
  • 1/4 cup melted butter
  • 1/2 cup granulated sugar
  • 1/4 cup firmly packed brown sugar
  • 2 cups unsifted flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon mace or nutmeg
  • 1/2 cup golden raisins

Instructions

  1. Combine eggs, applesauce, melted butter, and both sugars in a bowl.
  2. Mix well by hand.
  3. Add dry ingredients: flour, salt, baking soda, baking powder, cinnamon, and mace or nutmeg. Mix until just combined.
  4. Pour the batter into a well-greased fluted mold (1 quart) or a 5 x 9-inch loaf pan.
  5. Bake in a preheated 350°F (175°C) oven for about 1 hour, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool.
  7. Frost with simple confectioners' sugar frosting if desired.
  8. Slice and serve; best enjoyed on the second day.
