Ingredients

  • 2 tsp. olive oil
  • 1 large onion
  • 1 medium green bell pepper
  • 2 tsp. minced garlic
  • 1 15 oz. can chickpeas, drained
  • 1 15 oz. can pinto beans
  • 1 15 oz. can navy beans
  • 1 Tbsp. honey
  • 1 Tbsp. dijon mustard

Instructions

  1. Heat oil in an extra deep, 12-inch nonstick skillet on medium-low.
  2. Peel and finely chop the onion, adding it to the skillet as you chop.
  3. Seed and finely chop the green bell pepper, adding it as you chop.
  4. Raise heat to medium-high and cook for 5 minutes or until the onion is tender.
