- Melt and cool the butter or oleo.
- Add Equal sweetener to the cooled butter.
- Add the beaten egg or egg substitute.
- Mix well and sift together the dry ingredients: flour, baking powder, cinnamon, ginger, and nutmeg.
- Add the dry mixture to the butter mixture alternately with the skim milk, mixing after each addition.
- Stir in the chopped pecans.
- Pour the batter into a greased loaf pan (9 1/2 x 5 1/4 x 2 3/4 inches).
- Bake in a preheated 350°F oven for about 1 hour.
- Let the bread stand wrapped in waxed paper or foil for one day before slicing to make it easier to cut.
