Ingredients

  • 1/2 cup butter or oleo
  • 12 packets Equal sweetener
  • 1 egg or 1/4 cup egg substitute
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1 cup skim milk
  • 3/4 cup chopped pecans

Instructions

  1. Melt and cool the butter or oleo.
  2. Add Equal sweetener to the cooled butter.
  3. Add the beaten egg or egg substitute.
  4. Mix well and sift together the dry ingredients: flour, baking powder, cinnamon, ginger, and nutmeg.
  5. Add the dry mixture to the butter mixture alternately with the skim milk, mixing after each addition.
  6. Stir in the chopped pecans.
  7. Pour the batter into a greased loaf pan (9 1/2 x 5 1/4 x 2 3/4 inches).
  8. Bake in a preheated 350°F oven for about 1 hour.
  9. Let the bread stand wrapped in waxed paper or foil for one day before slicing to make it easier to cut.
