Ingredients

  • 2 Tbsp. butter
  • 3 carrots (about 1/2 lb.), sliced
  • 1 small onion, chopped
  • 2 (14 1/2 oz.) cans vegetable or chicken broth
  • 1/4 tsp. dried tarragon
  • 1/4 tsp. pepper
  • 1/2 c. heavy cream

Instructions

  1. In a large saucepan, over medium-high heat, melt the butter.
  2. Add the sliced carrots and chopped onion.
  3. Cook until the onions soften, about 5 minutes.
  4. Add the vegetable or chicken broth, dried tarragon, and pepper; bring to a boil.
  5. Reduce heat and simmer until the carrots are tender, about 5 minutes.
  6. Stir in the heavy cream before serving.
