Ingredients

  • 28 oz. can tomatoes
  • 1/2 cup diced green pepper
  • 1/3 cup chopped onion
  • 1/4 cup butter or margarine
  • 1/4 cup flour
  • 2 cups diced cooked chicken
  • 2 teaspoons salt
  • 1 teaspoon leaf thyme or gumbo file
  • 1/4 teaspoon hot pepper sauce
  • 1 cup rice
  • 1/2 pound shrimp peeled and deveined
  • 2 tablespoons chopped parsley

Instructions

  1. Drain and coarsely chop the tomatoes, reserving the liquid.
  2. Cook the green pepper and onion in butter in a large saucepan until tender but not brown.
  3. Stir in the flour and cook for 1-2 minutes.
  4. Add the chopped tomatoes, reserved liquid, cooked chicken, 1 teaspoon salt, thyme or gumbo file, and hot pepper sauce.
  5. Cover and simmer for 20 minutes.
