Ingredients

  • 3 whole chicken breasts
  • 1/4 cup margarine or butter
  • 1 medium green pepper
  • 1 cup celery
  • 1 teaspoon salt
  • 3/4 cup water
  • 1 can pineapple chunks (5 1/2 oz.)
  • 2 tablespoons dried onion flakes
  • 1 teaspoon tarragon
  • 1 chicken broth cube
  • 1 tablespoon cornstarch
  • pimento

Instructions

  1. Cut chicken into finger-sized strips.
  2. In an electric skillet at 350°F, melt the margarine or butter.
  3. Add the chicken strips and cook for 3 minutes, turning constantly.
  4. Add the green pepper strips, celery, salt, water, and pineapple juice.
  5. Cover and cook for 3 minutes.
  6. Add tarragon, onion flakes, chicken broth, and pineapple chunks.
  7. Bring to a boil, reduce heat, cover, and cook for 4 minutes.
  8. Mix cornstarch with cold water to make a paste.
  9. Gradually add the cornstarch mixture to the skillet to thicken the sauce to desired consistency.
  10. Add chopped pimento for color.
  11. Serve over rice or noodles.
