Ingredients

  • 1 c. sugar
  • 1/3 c. butter or margarine, melted
  • 1 tsp. lemon extract
  • 1/4 c. fresh lemon juice
  • 2 eggs
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. milk
  • grated rind of 1 large lemon
  • 1/2 c. chopped pecans

Instructions

  1. Combine sugar, melted butter, lemon extract, and fresh lemon juice in a bowl.
  2. Beat in eggs, one at a time, until the mixture is smooth.
  3. In a separate bowl, mix flour, baking powder, and salt.
  4. Stir in the wet ingredients alternately with the milk.
  5. Add the grated lemon rind and chopped pecans.
  6. Pour the batter into a greased 4 1/2 x 8 1/2-inch loaf pan.
  7. Bake for about 1 hour or until a toothpick comes out clean.
