Ingredients

  • 2/3 cup mashed potato flakes
  • 3 cups unsifted flour
  • 3/4 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon ground mace
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup milk
  • 3 teaspoons shortening
  • 1 teaspoon vanilla extract
  • Confectioners sugar or cinnamon sugar for sprinkling

Instructions

  1. Prepare potato flakes as package directs for 2 servings; set aside.
  2. Sift together flour, sugar, baking powder, mace, nutmeg, and salt.
  3. In a large mixer bowl, beat the prepared potatoes, eggs, milk, shortening, and vanilla until well blended.
  4. Stir in the dry ingredients.
  5. Divide the dough in half.
  6. On a well-floured surface, knead each portion to form a smooth ball.
  7. Roll out each dough ball to 1/4-inch thickness.
  8. Cut with a floured 2 1/2-inch doughnut cutter; re-roll excess dough and cut remaining doughnuts.
  9. Fry in hot oil at 375°F until golden brown.
  10. While warm, sprinkle with confectioners sugar or cinnamon sugar.
