Ingredients
- 2/3 cup mashed potato flakes ⓘ
- 3 cups unsifted flour ⓘ
- 3/4 cup sugar ⓘ
- 4 teaspoons baking powder ⓘ
- 1/2 teaspoon ground mace ⓘ
- 1/2 teaspoon ground nutmeg ⓘ
- 1/2 teaspoon salt ⓘ
- 2 eggs ⓘ
- 1/4 cup milk ⓘ
- 3 teaspoons shortening ⓘ
- 1 teaspoon vanilla extract ⓘ
- Confectioners sugar or cinnamon sugar for sprinkling ⓘ
Instructions
- Prepare potato flakes as package directs for 2 servings; set aside.
- Sift together flour, sugar, baking powder, mace, nutmeg, and salt.
- In a large mixer bowl, beat the prepared potatoes, eggs, milk, shortening, and vanilla until well blended.
- Stir in the dry ingredients.
- Divide the dough in half.
- On a well-floured surface, knead each portion to form a smooth ball.
- Roll out each dough ball to 1/4-inch thickness.
- Cut with a floured 2 1/2-inch doughnut cutter; re-roll excess dough and cut remaining doughnuts.
- Fry in hot oil at 375°F until golden brown.
- While warm, sprinkle with confectioners sugar or cinnamon sugar.
