Ingredients

  • 3/4 lb. lean ground beef
  • 1/2 c. chopped onion
  • 1 pkg. Rice-A-Roni beef flavor
  • 1/2 c. salsa
  • 1 tsp. chili powder
  • 4 c. shredded lettuce
  • 1 medium tomato
  • 1/2 c. shredded Monterey Jack or Cheddar cheese
  • 1/2 c. crushed tortilla chips

Instructions

  1. In a large skillet, brown the ground beef and chopped onion. Drain excess fat.
  2. Remove the beef mixture from the skillet and set aside.
  3. Prepare Rice-A-Roni beef flavor according to package instructions.
  4. In a large bowl, combine cooked Rice-A-Roni, seasoned beef, salsa, and chili powder.
  5. In a serving bowl, layer shredded lettuce, chopped tomato, and shredded cheese.
  6. Top with the beef mixture and crushed tortilla chips.
  7. Serve immediately.
