Quick Unusual Corn Bread

Ingredients

  • 1 cup chopped onion
  • 3 Tbsp melted butter or margarine
  • 1 small package corn muffin mix
  • 1 egg
  • 2 Tbsp milk
  • 1 cup cream-style corn
  • 1/2 cup sour cream
  • 1/2 cup grated sharp cheese

Instructions

  1. Saute the chopped onion in the melted butter or margarine until tender, but not brown.
  2. Remove the onions from the pan and set aside.
  3. Combine the corn muffin mix, egg, milk, and cream-style corn to make a soft batter.
  4. Stir in the sautéed onions and grated sharp cheese.
  5. Pour the batter into a greased baking dish.
  6. Bake at 375°F (190°C) for about 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
