Ingredients

  • 2 large boneless chicken breasts
  • 1 - 14 oz. can chicken broth
  • 1 - 14 oz. can vegetable broth
  • 1 - 14 oz. zucchini in tomato sauce, not drained
  • 1 - 14 oz. can cut green beans, drained
  • 1 - 14 oz. can sliced carrots, drained
  • 2 - 15 oz. cans mixed vegetables, not drained
  • 1 - 14 oz. can whole kernel corn, drained
  • 1 - 14 oz. can stewed tomatoes, not drained
  • 1 - 14 oz. can diced tomatoes, not drained
  • 1 - 10 oz. can diced tomatoes with green chilies, not drained

Instructions

  1. Grill the chicken breasts until fully cooked, then shred or dice them.
  2. In a large pot, combine the chicken, chicken broth, vegetable broth, zucchini in tomato sauce, drained green beans, drained sliced carrots, mixed vegetables, drained whole kernel corn, stewed tomatoes, diced tomatoes, and diced tomatoes with green chilies.
  3. Bring the mixture to a boil, then reduce heat and simmer for 1 to 2 hours, stirring occasionally.
